is there any reason why i cant use 5w-40 shell helix ultra in my Mk2 Leon Cupra?? The Hand book says use 5w-30 but there's over £10 difference in price. Is the 5w-30 just for longlife?

What year is yours? And is it a petrol or diesel?

You are not supposed to use it, as it does not meet the VW504.00 spec I believe specified. However it is a good oil and as long as it is not used as a long life oil will be fine. Remember, as it does not meet the VW specs you may have warranty issues if something does go wrong.
