Does the ESP/TCS mess with a differentials proper operation

As above, Will the TCS/ESP be more sensitive that a differential? Therefore cutting the power before the diff does its work. If so can this safety features be turned off totally within the mapping process to allow the diff to do its work

Quaife differentials?

Actually i dont know what does a differential do.Does it help to prevent skidding or can it help in drag races?
