overheats

Quick question, Ive had a search but still dosnt narrow it down, My Car is playing up. ( Mk 3 Sport ) its over heating , But not in traffic or doing around 0-40 only when i go above 60+ ? then ill pull over and it will kool down again? Im going to take out the stat tonight but...
