Has anyone changed their glow plug's on 2.0 tdi engine? Is it a pain of a job, im assuming they are under the rocker cover.

Have you high mileage , bad starting or failed glow plugs on it?
The last 2.0TDI that I replaced 4 months back had 130K on it and they never needed replacing. I believe from memory the service book may show you at what mileage that they are recommended to be replaced but i'm sure that is when it reaches a fair chunk of miles.
 
If it's poor starting only in very cold weather I'd be inclined to check the battery first before going anywhere near the glow plugs.

From memory i am sure the recommended replacement of a battery is 4-5 year old.
Think you may also need to consider the cold weather conditions ref. diesel temperature etc.
for me I would be doing battery first, diesel filter cartridge (as a matter of change), maybe check starter motor (under load) then glow plugs.....
