It could be the fins on the waterpump loose, and it doesn't generate enough flow, take the top hose off the rad(cold obv!), start it and rev it, it should scoosh water when you rev!

Could also be stuck thermostat, not open enough! If you change it, being the cheapest place to start, I have done a quick guide on post #20 here: http://www.seatcupra.net/forums/showthread.php?p=4079240

surely if it was any thing to do with the termostat my car would not heat up at all or would take forever??
what if there is no 'schoosh' of water when i rev lol does that mean its the waterpump??

it would lead you to beleive there is no flow therefore either water pump or blockage.

if the thermostat was stuck say 3/4 open. then it would heat up and maybe be ok at idle... remember its january, its hardly warm. but not allowing enough flow at driving rpms generating lots of heat.
 
I had a similar problem with mine, mine was a water pump, thermostat and temp sensor, if ur fans are working means your sensor is working, with the over heating it brings it 2 the water pump or thermostat, like they say its a cheap fix a thermostat is, they can work both ways as take forever or over heat,
 
My mate had this problem with his lexus..we bought this flush out stuff from Halfrauds..spent 3 hours flushing the radiator and the engine..now its fine :)
 
was the water pump guys
got full cambelt waterpump an fan belt change
all with a stronger waterpump to!
