I picked up my Leon E-hybrid on Thursday and have yet to work out how to use the battery reserve.

I've tried clicking various different percentages but the battery always continues to fall below these.

Any clue as to what I'm doing wrong?
 
I don't think you're doing anything wrong, rather the software in these cars is questionable at best.
 
Nothing wrong, even if you choose to save, let's say 80%, driving slow the car can still go lower than that but when you start going faster it will then charge it back. I would say that if you choose to save 80% the car normally goes down to 70% before charging the battery more agressively. so always allow around a 10% buffer.
