Cant speak directly for the BXW engine but most of the others is just a case of filling up the coolant ( make shure it's G12 or G13 compliant ).
Then start the engine with the expansion bottle top off and allow it to circulate the coolant.
Any air pockets should find their way to the expansion bottle and the level will drop.
Keep topping the level to the mid point.
As soon as the level seems to be rising slightly - put the expansion bottle cap on.
run it till the fans kick in.

Haynes manual for Mk 4 says pop out coolant sensor until water is running through then replace and top up.By the time I read this I had assumed would self vent did short journey and level dropped enough to require a litre of topping up.However did pop sensor out and full.Think may only be necessary to do sensor if you have fully drained system not just for top pipes .

I think that the issue with the Passat would be due to its engine sitting higher than the heater hoses and the fill point being quite low.
