Thermostat solved mine eventually - after removing alternator, replacing dipstick tube, removing sump to retrieve broken pieces of dipstick tube!! At least I've got a spare temperature probe now as there couldn't have been anything wrong with the original.
Don't waste your time looking at coolant temp on climate control diagnostic screen as it blatantly lies, showing what you should be getting but not actually - vagcom was only way to confirm temp gauge reading.
This puts me off changing mine lol. Was it a struggle?
Is it a Cupra or an 'R' ?
If its a cupra, they are not very difficult... (R may be same, not done one) I can tell you what you need to do, you need not worry about the dipstick/sump issues, just about 5-10 bolts, about an hours work , two if you take your time mate.
Wasn't 't too bad, just spread over 2 weekends due to not having time / parts etc.
Alternator was a sod to get off & needs a damn good cleaning of the mounts to get it back on!!
Dipstick tube just fell to bits, which wasn 't expecting & couldn't stop them dropping into the sump - had to break the plastic section into bits to get of the metal base.
Socket set Flex joints always fun to struggle with.
