Apart from noise what would be the affect of fitting a large bore cat back to what I think is a 2 inch system would I lose power or would it not do anything?
 
Interesting! Id guess at youd get gains with 3" and a sports cat.
dont forget the entire exhaust system should be the same diameter for best results

Just cat back at the moment due to warranty and the fact I bought the cupra r milltek off Benjic2, I would think ideally I shouldn't go bigger than a 2.5 inch from turbo back to try and keep some back pressure for low end torque
 
You won't lose any mate, if not actually gain a tiny amount, you want the least back pressure as possible after the turbo on a turbo car , complete opposite if you have n/a where you need back pressure to keep the power. The turbo works on pressure difference and if you have a high pressure at the engine end and low pressure at the exhaust end then that helps keep it spinning.
For what it's worth I have heard a 3" system on a new polo ( same engine I think) and it sounded the nuts :)
 
as promised idle to 4000rpm but sounds better under load
