I have a new Cupra formentor V2 1.5 and have just noticed that when I changed from first to second the car will carry on accelerating even without my foot on pedal, is this normal?

It probably starts eco mode (different from eco engine mode in individual driver profile settings) automatically which should be visible on your dashboard, check your manual for more info. I can't tell you exactly but I think when you don't press the gas pedal and you don't brake it "cruises" the car as a way of saving fuel.
