I wouldn't bother.
SEAT will have spent a lot of time and expertise choosing the best all round tyre size for the car/wheel rim width.
Wider tyres on the same rim will move around more on cornering so the steering may feel less responsive.
They may also show uneven wear.

It's been a whole summer now, and no problems whatsoever. Family trips with fully loaded car and there was no rubbing. Regarding performance I like the way car is behaving. Steering is slightly numb, but grip is much much better. Also bigger sidewall made the ride more compliant which is also a big plus for me...Thats exactly what i am planning to do too !
