I would assume by it being wider you have more of a surface area for grip.

I just put a set of 235/35/19 Michelin PS4S to my car and although they still need some running in, first impressions are positive.
I did notice that the rim protection lip is minimal and that they don't look as wide as the same size Continental SportContact 5P that they replaced.
I would say that a change in wheel circumference will affect your speedo and potentially wheels might rub in full lock or inside of tire might rub against strut in full lock.

I wouldn't bother.
SEAT will have spent a lot of time and expertise choosing the best all round tyre size for the car/wheel rim width.
Wider tyres on the same rim will move around more on cornering so the steering may feel less responsive.
They may also show uneven wear.

The brand of tyres fitted from the factory might not be the best for a performance car - especially if they’re rock hard Bridgestones that VW fit to many of their performance models, but the tyre size that was determined by Seat should be the optimum for the car and wheel width.
Agree that 245/35 tyres may move around more on cornering than 235/35 tyres as a 245/35 tyre will have a higher sidewall than a 235/35 (85.75mm for a 245/35 compared to 82.25mm for a 235/35). To what extent this could be an issue may depend on the brand of tyre, as some brands / types of tyre have stiffer sidewalls than others.
I’d stick with 235/35’s.
Just wanted to contribute this topic, because I also reserached before buying. Fitted 245/35 R19 Continental SportContact6 today on Leon Cupra with standard wheels and standard suspension. No rubbing at all, much much lower rolling noise than the OEM PZero. I need more time, but for now better acceleration and less wheel spin, and also much compliant ride on bad roads...

Thats exactly what i am planning to do too ! Have you encountered any issues since you changed to 245 ? Do you recommend it ? Thanks in advance
It's been a whole summer now, and no problems whatsoever. Family trips with fully loaded car and there was no rubbing. Regarding performance I like the way car is behaving. Steering is slightly numb, but grip is much much better. Also bigger sidewall made the ride more compliant which is also a big plus for me...
I will definitley stick with this dimension min future.
One more thing, I measured OEM 235 35 r19 Pirelli P Zero, and in fact they were 225 wide. These Contis are 245 exactly, so the real benefit in width is even better..
I tried 245/35r19 on my Cupra and in full lock, they'd rub. I already had coilovers and fitted spacers to solve the issue. This is for winter tires only though.
