I agree with the comments above. On our previous 68 plate A3 S-Line, the bolster/seat base side closest to the door was leather, but inner side was faux. It looked worse than one or the other, as the leather would crease and the faux side looked brand new.
The Cupra seats show no signs of wear/creasing which would concur with @Damo H above.
Also our 5 year old FR with 100+k miles interior looked brand new when we sold it, so seems to hold up well - far better than the equivalent age/mileage Octavia VRS that we had at the time.
I had a Mondeo ST before the Leon and that had genuine half leather seats. The Leon looks leathery, but definitely isn't, even though I thought it was when I looked at the pics before I went to test drive it. Didn't make any difference to me though and in fact probably much easier to keep in good condition if you look after it.
I've not tried cleaning the interior yet (not had it a month yet), but I'd probably just use something like AG Vinyl & Rubber Care as I already have some of that
