Any VW I‘ve owned also needed to have the clock adjusted manually in March and October when the time moved forward / back an hour.
 
And mine at auto settings just sets the opposite if am it will select pm and of course date is different. So have to keep the watch at manual settings.

I woke up today also with an incorrect clock, I do believe I've been spoiled with coming from a '17 Audi S3 and never having to worry about it, I now have a 2019 Seat Leon Xcellence Lux and it hasn't done it, even worse when you try to click from manual to automatic change it says "Function not available" or something to that tune.
Not a big problem for me as I had to manually do it in my 2014 Seat Ibiza Fr but it does kind of suck to suggest that the Xcellence Lux is supposed to be the sub model with all the creature comforts and sitting below the cupra but above the FR.
Makes me wonder what the MK3.5 Leon Cupra guys experience and if they have the same issue, because in theory it should be the same as my old S3

My Bizas 2010 & 2013 and my 2014 Leon Cupra 280 all did it themselves, can't remember if the earlier Bizas did. Looks like all the 2015 on models don't, that's progress for you.
