Came across a Leon on auto-trader in FR trim, listed by a dealership. The headlights are halogens but the taillights are LEDs, likewise has no front parking sensors, but does have rear sensors, appear official in photos. It also is without SatNav, another thing I didn't know was possible in FR.

I'm sure it's nothing to be concerned about, but I know some dealers get up to mischief from time to time and wondered if this was any reason to be suspicious.
 
Sounds like it excludes the tech pack, I'm sure it was an optional extra even on the FR but every one I've seen has it. Think they were running a promo or something and included it for a good while so it's rare to see one without.

Think the FR had the visible exhausts so have a look for them if you're suspicious

I'm guessing its a 2013-2014 car? That's where I saw the most FR's minus the tech pack.

Description says Winter pack but heated seats appear not to be present in the photo of the dashboard, although maybe you can get the pack without heated seats? Or maybe heated seats without the actual sticker on the dashboard buttons?

Another note: https://www.gov.uk/check-mot-status lists this plate's fuel type as DIESEL but it's clearly a PETROL engine in the ad. Does this just mean the last time it had it's MOT done the engineer entered it wrongly?:/

it's a very basic spec FR.

No tech pack - that's a big thing to be missing. The majority of other FR's at this age will have it. That's the full LED headlights, sat nav and dab radio you're missing out on.
Winter pack is heated seats and headlight washers - no evidence of either in the pics
Adaptive Cruise - it might have cruise but not adaptive. No evidence of the radar sensor in the front grill.
SEAT sound - again as you say no evidence of this. Have a look at the spare wheel, the seat sound sub should be in there.

If you are already doubting the car at this stage then I'd say walk away. There must be other 2016 FR's out there with a better spec?

Unless of course it's £1000 cheaper than the others? Bear in mind when you come to sell on the poverty spec will work against you.

The information shown is what's recorded on DVLA's database - 1395cc Diesel, its the same on DVLA car tax check therefore not something the MOT tester has entered so if fuel type is incorrect someone has entered information incorrectly. If you tried the VIN number with a dealer to see what the Seat data showed I suppose it could be incorrect model code from factory but that would be unusual I think? As a 1 owner car this has probably never been picked up as the V5 will also be incorrect. Walk away, could prove an issue later on if it can't be changed by DVLA (probably too many hoops to go through).
