I’m looking for a new headlight and the part number on my current headlight is 5F2941007 and I’ve found one with the part number 5F2941007C for a reasonable price, would this work seeing as tho it’s got a letter on the end?

I checked that on parts catalog and interestingly all LED headlights with that part number have a letter at the end like A, B, C or D; there isn't any without a letter. If you don't mind, send your VIN over to me via PM and let's see what it would show when I look it up by VIN.

Parts catalog lists the headlight part number for your VIN as 5F2941007A.
If it had showed it as C, you could safely buy the C you found.
I can't say anything for sure for the A/C compatibility, sorry.

According to ETKA (the official parts catalogue), version A was dropped on 01 April 2016, and superceded by version C. So the C version is a direct substitution.

That's a very useful feature of ETKA!
I use partslink24.com as a monthly paying subscriber, they cover not only VAG but almost all manufacturers, and keep the content always updated, I have no problem on that front and I'm happy with their services. But they don't include this specific dropped & replaced information unfortunately. They just list both parts, along with their starting & ending dates too, but the problem is that there's no way of knowing if the new part substitutes the old one or if the new one is some kind of an engineering or design change which is valid for only cars built after that date and the old part will be kept in circulation too.

I'm thinking about writing an email to them and asking about if they would consider adding this important feature.
