Does anyone know if you can get the oil temp on the MFD+ display in a 2008 pfl cupra ? Or any other things on it apart from mpg and range etc ?

You will need an aftermarket product to get custom readouts in the MFD display.

Polar FIS is a popular choice and seems to work well on the Mk2 Leon
