Mysterious Clutch Problem

I have a 2017 Leon FR 1.5 EcoTSI with a clutch pedal that sometimes falls to the floor or gets stuck on it's way back up. The clutch also feels terrible to me with a vague bite point and inconsistent feedback.

The garage replaced the master cylinder during warranty but this hasn't solved the issue. I recently contacted the garage who agreed to inspect and pay for the repair despite the car now being out of warranty.

Following the inspection, I was informed that the car had been test driven and examined and that no fault was found and that there were no fluid leaks. A bit of reading up on clutches tells me that if the master cyclinder is not at fault for this issue it would probably be the slave cylinder, which can have issues even without the leaking of fluid.

The mechanic said that because the system is self bleeding, it may have released some air causing the clutch pedal to drop. This sounds like a very dangerous and very unlikely design feature so I'm a little dubious about that explanation. The system has also been bled twice. They're very reluctant to do any further investigation that would require the removal of the gear box. They also deny that the clutch feel is bad, which is very surprising to me as I've driven many vehicles and never had a clutch feeling that bad. It's like there's little resistance in the pedal and no power to the bite point.

I'm considering contributing to some of the cost as the car is out of warranty, if I can pursuade them to dig deeper and actually fix it.

Is it worth taking the gearbox off in this scenario and replacing the clutch, DMF, slave etc or would that not be worth it? Oh and the car has done around 45,000 miles.
