Hello mate there are a few of us down south way. Southampton/Pompey there is a thread in the local meets for the South Coast owners that I started 
Mk1 Leon fr 180 forge dv, scorpion cat back system, cupra r alloys, ash hoses, k and n filter, and some pretty painted colours under the hood thought I'd come on here for some advise as what to do next? Should I remap stage 1 then build up slowly for the second map or should I fm intercool then stick stage 2 straight on?

Have a look in the Leon MK1 section.
stage maps are generally a generic map, i good tuning company will map you car to suit what mods you have
southampton way there is a company called BM Conversions, they have their own dyno and chris will spend a few days days mapping it it and running it on the dyno for the map to be perfect A lot of people would recommend him

I couldn't say exactly mate as all his maps are different. Be worth calling him up, he is on Facebook too. If you are on Facebook would be worth joining the southern customs page nearly everyone will vouch for bm conversions
