OK I have what is probably an unusual question I bought my self a cupra 300 4 drive and the previous owner had it stage 2 tuned with a 3 inch miltek exhaust system and possibly other parts it apparently make near to 400 bhp now but on normal driving I am lucky to 30mpg so can i get it downtuned a bit for better mpg or is there an option to vary the tuning so i have economy in drive mode and power in sport mode or do i have to put the car back to original parts. just trying to get an idea of my options. Thanks in advance for any advice

What fuel economy were you expecting?
well i wasnt expecting 50mpg but i had leon 190 before that did 50 mpg easily and the standard 300 does 40 so i would like to get around 35 with normal driving but i got 29.5 on a reasonable drive and back and forth to work i get 26

Real world mixed usage economy on a standard 2WD 2.0 TSI is circa 35-40mpg at a push. The likes of the Golf R or Cupra 4Drive were never realistically designed with economy in mind, plus a vehicle with AWD and modifications (especially stage 2 tuning where the CAT/GPF has potentially been removed) could contribute to a big drop in MPG (a not very efficient tune being an underlying factor).

Reverting back to stock is going to cost a substantial amount of money to replace the exhaust system, have the map removed/altered etc.

Have you considered an alternative vehicle? I only ask, as I don't think there's going to be a "one size fits all" solution.
