As above, how would one go about this? Obviously if you used filler, it wouldn't polish up, would it? Or it there a certain type of filler you can use for this type of job? And would this be a service that wheel refurb places offer?

good question, I just (today) kerbed the crap out of my front alloy, 30mph in to a kerb, damn Tesco car parks and their small entrances.
 
I avoid any kerb at all costs - if you want to keep it polished think itll need to be sanded back, filled with metal, buffed and flushed etc! much easier to then just smooth it off and put a coloured rim on it! LOL!!!

i recently refurbished 4 bbs rs771 for my mk3 golf the lips were very badly damaged, i mounted the wheel on the car when on axle stands/ramp and run the car in gear around 3-4000 rpm and used progressively finer sand papers starting at 60 grit and finishing on 3000 grit then metal polish.
I haven't laquered them just use wax to protect, very time consuming but worth it
