If it's the same as a golf, which I think it is, there is a release plug with a fork that goes through the top of the handle on the reverse of it (side facing the pedals). Pull the lever towards you as if you are releasing the bonnet and feel the top part that pivots on the side facing away from you.

There should be a smooth section of plastic with a gap along the top edge, get a trim removal tool, screwdriver etc. down it and lever it out partially you should then be able to pull the handle off. Very fiddly to do whilst holding the handle out!

From what I remember, the mechanism for the cable sits further in behind the trim panel. This will remove the handle from the spindle it turns, which will let you take the trim off behind it, which I assume is the aim?
