Because most of the time people fit them, they fit them along with new uprated pads, So they think that the disks have made their brakes better.
Track use is where you want the uprated brakes so you can avoid fade for longer, on the road the standard Cupra R discs are more than enough so it's really only for style if you want to uprate them.
so it's not the brakes themselves it's the new pads????
Seems like that can't be right because then no-one would buy uprated discs !
Pretty much that-the pads are much more abrasive and as a result wear the discs quicker too.
Uprated discs allow them to cool faster and gases to escape better.Unless you are getting brake fade then not really needed for the road.

I understand why grooved, dimpled, drilled brakes work but why are plain brakes such as EBC brakes better than OEM's ?

one EBC does not make a plain brake pad green, red, or yellow is their mix green being as close to oem but is still an upgrade log wear less brake dust still more then the red/yellow as it has less ceramic in its composition...... oem brake pads may not have any of that definitely

they're not..
they're equivalent.... and in the case of 323x28, significantly cheaper than brembos are. (OE)
combine them with a good pad and its overall "better"
