Normally the sensor in the coolant tank sometimes gets corroded/contaminated which in turn gives a false reading.. It is possible to clean the metal prongs. However, if I remember the new prongs don't cost too much money to replace!

Thank you for your reply do you think it could also be the coolant sensor that goes in to the engine which is held in with a plastic horse shoe clip

very common issue, usually when the seasons get cold and the level drops a bit.

you cant buy the prongs, only the whole coolant expansion tank.

try the following:
remove expansion cap, then wiggling gently, and scrape the prongs which go into the coolant. It senses the level by the coolant linking the prings. if the prongs get a bit dirty this effects the conduction.

The other option is to simply have the coolant level a bit higher.
It only happens when cold as the coolant level increases as the temperature increases.

Clearly dont increse level too much, as the expansion tank is there for a reason. but set level to top of range indciated, it will be above this when hot but this is normal.

also you could plug the sensor lead and clean the contacts to help with signal.
