Its my understanding that while you don't have to go to a main dealer, you do have to use a VAT registered garage taht uses genuine parts and carries out the work according tp the Seat schedule. I may be wrong, but I don't think so - I'd check it out before you get stuck in.
The warrant issue isn't an issue any more. Car warranties are not allowed to dictate where you get the car serviced any more, the Government put a stop to that a couple of years ago.
Previously, if you bought a Seat you would have to have it serviced at Seat or else you void your warranty.

That's a good tip, never thought of taking the car to Skoda! Personally, I've found a good independent garage - JKM in Portsmouth - and will stick to using them as they are quite a bit cheaper than Seat but I actually trust them to do a good job, as opposed to letting the YTS boy loose with my car at Seat.
Not necessarily for the simple services (10, 30, 50 etc) that are a fluid and filter change and inspection. If you have the ability to do a proper job using the correct parts, following the correct schedule then there is no harm in doing it yourself.
But you may find the lack of a proper service history will put any potential buyers off in the future when it comes to selling time. And also you'll have to prove beyond all doubt that you have correctly serviced the car when it comes to making any warranty claims. Legally you're fine, as mentioned above, but we all know how picky main dealers can be so make sure you have detailed records of everything changed / serviced.

The VAT registered thing comes into play with warranty claims, but not servicing. As an example, when I had problems with my LCR I really didn't want to take the car to Seat for a number of reasons (idiots, YTS boys, clueless fools and no rolling road to diagnose the problem.. take your pick). I called the warranty holding company and was told that I can take it to any VAT registered garage to have it repaired. So I went to JKM in Portsmouth who diagnosed the problem, fixed it and sent the bill to the warranty company 
What part of the country are you in? There are loads of good independent VAG specialists around the country that will offer a better and more honest service often for a cheaper price. They can also be more flexible when it comes to what they do, so if you're happy to do, say, the oil and filter changes yourself and then let them do the rest and stamp the book, you get the best of both worlds.

When it comes to selling time, that stamp in the book might be worth more than you think. If you want though, most garages will let you supply your own oil, so that might shave a few pound off the price?
