2020 DSG7 shifting issues on track

Hey guys, sorry if this is the wrong section.
I've got a 2020 Copper Cupra with the DQ381 DSG7 transmission.
The car is used as a daily and I race and compete with it.

I've had an issue since day 1 regarding shifting, especially downshifting, on the track.
Whenever the car is on ABS, or whenever the car slides with any corner, even with the TC and ESC turned off (Long press untll everything is turned off), the stability control light starts flashing, and it disables my control of the transmission for the duration it flashes.
Usually this mean I approach a hairpin in 3rd, downshift to second while braking, the car doesn't downshift into 2nd, and when I get out of the turn and am accelerating (in 3rd), once the ESC light turns off, the car shifts down into 2nd. This even happens if it would downshift into the redline. The only way to avoid the downshift after the turn is to upshift once coming out of the turn, which just keeps it in 3rd gear.
To avoid this downshifting issue I need to brake a lot easier, losing time, or make sure I do it without ABS which isnt ideal.

I've got an TVS software for the transmission, which hasn't fixed the issue. And when I tried contacting them, they said they have no control over it and that I have to try and contact someone who could code it the same way they code the stop/start off by default.

Im lost as this happens every time the car slides around or when I use ABS on the track and it's harming the engine if it does decide to downshift to the redline.

Any help would be greatly appreciated, as Im absolutely lost by now. Had it since January and still havent found a solution.

My understanding is that even a long press of the button doesn’t actually fully turn off the TC. I believe it can be coded to be fully turned off with something like VCDS or OBD11. That may help.

What Damo H said. It's my understanding that its off, but not completely off. Get it coded as such and you should be good to go.
What am I looking for specifically in coding? As I've asked around coders in my area, they don't seem to know about a specific way to turn it off fully.
