Either unclip or unscrew the grille section around the fog light then the fog twists out and you can change the bulb if your grille is screwed in much easier but not to hard if not.
Other to that may be able to jack car up get undertray off and put your arm up into the back of the bumper and pull bulb out that way
I've done it on mine mate, I think the only way on the Cupra is bumper off. I have easy access to a 2 post ramp though which does make it hell of a lot easier lol

Planning on a glovebox light & changing the main interior light to the VW Passat W8 type, with the ambient red leds, did that with my Mk1 Leon - liked that as well!!!

I might be wrong, but I dont think HIDs will work well in the fogs. When they come on for the cornering and when you put the car in reverse, they dim up and down slowly. Im not sure HID ballasts will like that.
