Took it to the local VAG specialists this morning, they are too busy to look at it but they did check for fault codes.....

None??!

Spotted another vac pipe that looked a bit dodgy so replaced that but still no joy :(

UPDATE:

Had enough yesterday morning and went and got a new MAF from VW (£88 exchange with 2 year warranty).

And hey presto, problem solved!

Thought i ruled that out by having a go with Ollys MAF but that turned out to be shot as well.

Glad to hear you fixed your problem. I'm going mad with mine doing about the same as yours. Let me get this straight: it could be: MAF, N75, pop-off... these could be the "most common faults" right? I got a "check N75" message on the VAG today and I'll replace that next week. Please help...

I would borrow someone elses MAF and see if that sorts it, then try someone elses N75. Save you wasting money. :D

could be the n249 valve the little box that sits on th top of the engine with all the boost pipes coming fron it have you tried replacing that
