It sounds like a clutch pedal switch is faulty. when your changing gear the car will rev about another 1k because the ecu doesn't know you have pressed the clutch down.so over revs it. will do it more on fast gear changes.no so with slow changes..
if you both have VAG com. check instruments for faults this will show clutch pedal sensor.

i think they only a few quid from dealer. takes less than 3 mins 2 change over on the cupra r dont need to take any panels off

I cant find the part number anywhere, but i know they are 4 Pin Blue clutch pedal switch.

They are located at the top part of the clutch pedal in a bracket. turn anti clock wise, to release them out of the bracket , unclip the wired plug two side tabs hold them in and pull the old clutch switch away. re fit the new switch in to the bracket and turn it clock wise there are some locating pegs so u cant fit it wrong a bit of a twist helps it in, replug the wires and road test.

Let me know how you get on with the problems

hhhmmm mine does this to, i thought it was down to the flywheel too. I've got VAGCOM working now so i'll check the instruments module as recommended.
