For the sake of simplicity I would like to mount my bikes on the roof.
However, I'm not sure if Formentor isn't too tall, and if it won't be super inconvenient (I'm 5'11).
Another option would be ordering a towbar with my purchase.

How do you carry your bikes with Formentor?

I have VAG hydraulic bike lift for roof, but it's out for production for years. I'm not strong enough to put a bike on the roof myself. If you're going to carry bikes often, towbar might be worth it.

I’m 5’11 mate and have roof bars carriers no problem at all.
only thing I would say is if you are mounting three bikes, you’ll need a step to reach the middle bike, but this would be the same for most normal height cars, I needed one when I had my 5 series touring and they are quite a low car on the first place.
But I’ve found it a doddle so far with the Formentor. ??

We have had a Thule row bar mounted bike carrier for about 10 years. It’s brilliant for holidays etc but you do have to remember it’s on the back as it does stick out a fair old way. Takes 4 adult bikes no problem
