If this is the 180bhp cupra, and we are talking about the 3 turbo-exhaust manifold bolts, then the haynes says 30Nm or 22lbf ft. It also says to use thread locking compound on them.
I don't think it needs to be super tight, just tight enough to stop any gas leaking out. I have double checked for you and it is definitely 30nm/22 lbf ft from manifold to turbo. That is maybe why it says to use thread lock too?
