Ive given my mums cupra a good over fill(prob upto 1cm over the tank centre) and tried to scrape the sensor all be it very clean looking to start with. As it goes off every day il report back tomorrow if shes happy with the results.
 
Seems to have done the trick as evenings and mornings has so far been fine without beeps when it would usually beep whenever started from cold
 
Ive done mine this weekend, screwdrivever... sort of scraped the metal (wires) inside, a little more coolant... Done... no more beeps
 
I have had this problem about 3 years ago, The head mechanic in the dealer said the coolant needed to be topped up to the max point inside the bottle not the one marked on the side. When he topped it up it looked about 1/2 cm above the external max mark. Not had the problem return since.
 
I have had the red light flashing on the temperature gauge a few of times now (On cold mornings)
I checked the coolant level the first couple of times it happened and it looked fine as it was midway between high and low, so I figured it must be a faulty sensor.

After reading posts on this I opened the cap on the header tank and scraped the 2 metal rods gently with a flathead screwdriver. Even though the coolant level is way above the low mark there is still the top centimetre of the two sensor rods that aren't covered by the coolant so I expect its a combination of deposits on the rods and that they aren't fully immersed in the coolant.

If scraping the rods doesn't fix it then I will add a little more coolant.
 
i had the same problem first the ecu light would come on. after checking it on v.a.g it was an intermitent fault witht the engine temp sensor. couple of days later starting from cold the temp light started flashing.. changed the engine temp sensor and all is fine. ther a bout 20 quid from euro car parts m8t

Mine happened a few times. all i did was clean the prongs in the expansion tank carefully with a screwdriver, They get corroded after time. and the beep has never happened since. try it its only a 2 minute job. Result!!!!
