I recently bought a 2016 DEMO model.

I absolutely love the car, but I'm a bit disappointed with the exhaust sound, compared to hatchback models I saw on YT.

What are some options I can do to achieve a better sound. Without spending thousands on a full exhaust system.

I'm planning to do a stage 1 remap in the near future aswell.

Okay thanks.

Can you combine the reso delete with a backbox delete !? And maybe a pops and bang tune ?
Yes, you can; however, probably best to do one section at a time so you can see if you like it first.

If you do a lot of motorway miles and/or carry passengers in the rear of the car, then removing the resonator may cause the exhaust to drone.

The pops and bangs are only really possible via a map which deliberately retards the timing - I have no personal experience of this on my own vehicle, but this article explains:

Unfortunately the exhaust in the ST Cupra (and Golf R) hasn’t been designed for noise.

Which model should I choose ?
You need to take a look under you own car to establish which exhaust system you have (version 1 or version 2) - version 1 has a joint circled in blue:
