IIRC you need 38mm caliper clearance for the Cupra R Brembos and the standard Cupra alloys give ~26mm so unless you want to run silly spacers it's not happening.

The HiSpec R114-4 (4 pot) calipers fit under standard Cupra alloys and come as a 2-piece disc kit (310x28mm) so that gives you another option. I've got these fitted on mine.
 
That's a lot on the fronts when you consider the rear wheels are tucked in 35mm narrower, meaning you'd have to run some serious spacers on the back to compensate unless you wanted horrid handling.

Then there's the increased scrub radius to consider...

If you want a brake kit that fits under the standard alloys then save yourself some hassle and go with the HiSpec kit which also offers bigger, two-piece discs

Yeah, about 3mm clearance on standard Cupra alloys. As above, loads pf pics of these in my project thread, showing them under the wheels too
