Hello! I need your help figuring out what this sign means in my seat leon. I've looked everywhere but couldn't find anything!

It looks as if there’s a fault with you car’s cruise control system. From the owner’s manual;

Fairly sure it's just the speed limiter.

Although I'm not even sure how to turn it off or adjust it

Might be very wrong here, but the OP says his car hasn't got cruise. If it hasn't got cruise, it won't have a limiter will it?

They still generally have the limiter. Although when I say limiter I should really mean warning as it's not a hard limit, just the warning when you exceed the speed.

Sorry for the confusion! I checked my friend's car today and it was indeed the speed limiter! Thank you all for your help
