Some have gone for the VR6 route but that is a lot of weight up front; the 1.8T option seems to be the better one. Roly has built a great looking red Mk2 - do a search there is stuff in the forum.
TBH unless you do the work yourself if is a lot of money - TSR used to quote £4k for an engine swap into a Golf Mk1 so assume an Ibiza would be a similar amount. Best way to do it is to buy a scrapped Mk3 Ibiza, do all the work yoursel, then sell off the various bits and pieces you don't need from both cars and if you are lucky, you may even end up making money.
the mk3 ibiza 20vt engine will drop straight into the mk2 with ease (there practically the same shell)
i've done two now and went into the 1st one blind with limited mechanical knowledge and basically taught myself as i went, there's various companies out there that can do it for you but expect to spend atleast 4k upwards unless you have a crack yourself
ebay is the best place to look for cars, engines etc as they do crop up from time to time (both of my donor cars came from there) and as Jason has said if you get a whole car you can sell on the parts you dont need (i managed to make a profit from mine )
