Alot of unexplained cutting out issues are normally the product of a faulty G28 engine speed sensor also know as the crank position sensor.
 
The sensor breaks down internally and stops sending a signal to the ecu, when this occurs the engine will just stop running like the key has been turned of but the ignition will remain on and live - as will the dash lights. Normally throws up a sporadic signal loss fault on the sensor.
 
A decent genuine updated copy of VCDS or cheap tat off eBay? because believe me it makes a difference.
 
Had mine checked on VCDS and by SEAT service centre, both confirmed no error faults. Happened again last Sunday coming off a motorway sliproad up to the lights doing about 30. Then on the way back it went to 1k revs (ie, 1st stage regen) so pretty certain it's DPF related. When it cut out though it was just after coming off the motorway doing 65 for about 30 miles - surely that shouldn't have caused a clog-up!!!

Done it twice this week, but I started notice you know when it's going to happen as car feels very stuttering when trying to accelarate.

I had it cut out about 6 times yesterday, was stuck in traffic and it kept doing it from 3rd to 2nd.

I've noticed that the exhaust starts to pop and goes quite bassy when it starts to happen, I can't remember the last time my car regened :(

Yep, that's what I had. Presumed it was regen prior to the 1k revs.
