Last summer I tried pre cut vinyl from ez wraps on eBay but never turned out right with there a bit too much excess which made it bubble up and look horrible.

Any other suggestions? Seen people use the thin cutting vintners technique but not sure what the stuff is called to do it that way, just know it’s green thin stuff, apply the vinyl on top then pull the green thin parts to your desired shape.

Just get some decent vinyl and knifeless tape to cut it? Fairly sure that's how any wrapper would do it.
 
What is knifeless tape?
Its what the pros use to cut vinyl on the car, basically its a plastic filament thing you lay down under the vinyl, then when you yank it up the filament cuts through the vinyl on top of it cleanly. Means you can get accurate, clean cuts without putting a knife anywhere near the paint.
