My car is about 3 and a half months old (55 fr TDi), the problem I have is that if I dont use the car for say 2 days or more, when I release the handbrake and attempt to pull away, it feels like the back brakes are seized up, theres then a loud clang and it feels as if they are freed up? Surely this cant be right? Anyone have any ideas??
 
It's normal on all rear disk setups that I've used. If you are planning on leaving it and it's safe to do so (IE on a flat drive guarage) leave the hand brake off and put it in gear.
 
I suspect you'll have much less of a problem when the summer comes and there's no longer any salt on the roads.

What I do find is that the handbrake is pretty crap compared to other cars I've owned. (Mind you, all other cars I've owned have had drums on the back - perhaps handbrakes are intrinsically less good on discs.) If I'm parking on a slope I nearly always leave it in gear.
 
Drums are genrealy better for hand brakes (quite a few cars used to use drums for the handbrake in adition to the discs for normal brakes, landrovers actualy have or posibly had a drum on the end of the trasfer box so it locks the rear diff.) Discs expand more than drums when hot so after some spirited driving cna contract and reduse the effectivness of the handbrake. That said the Ibiza one is a realy bad example, I have taken my car back to the dealers with it to be told it's normal.
 
Had the same thing after leaving the car for two weeks, very loud clang when I reversed. On our Megane, brakes were totally crap first drive after leaving for two weeks, drums were really stuck. The fronts were not right until after a few days of driving. A bit worrying.
