Is this possible at all? Not planning on doing it (although I would much rather a DSG) just wondering if it was possible. Apologies if it’s a stupid question!

Not stupid, just expensive. Sell the manual, buy a DSG. At least you'll retain your sanity.
If it came as an option they'll be parts and software to make it work. But as above would be expensive. Would require a specialist garage. And if not done right, might be leaving you with an undriveable car.
I looked it up for my MK2. Cause I'm sick of being stuck in traffic with a stiff uprated clutch. There's a guy that's had a dsg fitted. Mechanically it's sound. But it's throwing errors and effectively locked the gearbox till they are fixed. Enough to put me off.
Wouldn’t it be far more expensive to do that though? I am wanting more power but know I have to get a performance clutch but are they prone to slipping at a certain point just like the stock clutch is?
Yeah, a bit of a simplification is you can get Stage 1, Stage 2, Stage 3 clutches (as some companies advertise them). But basically you pick an amount of torque you reckon you'll go up to eventually and buy the equivalent nm rated clutch to handle it.
As an example, my stock clutch slipped at the top end of the torque band at Stage 2+. But if I put 95% of the power down, it held just fine. When it was eventually removed for the proper rated clutch, they said the old one looked brand new. Clutch wear depends a lot on how you use it. If you race off every set of lights, hold it on hills, etc, it'll wear regardless. But in reality, you only use the top end clamping force of the clutch 2-3% of the time (hopefully LOL).
If it's on pcp I can't imagine seat would be to happy about the swap over haha, as said it could be done but for the work involved it would be easier and cheaper to just sell up and buy a dsg
Once you consider the number of sensors and amount of software on modern cars, this sounds like a certain nightmare to me. Far easier just to change cars, as @LouG says.problem is with "conversions" they never seem to work 100% right.
I've seen MK1 Golf and MK2 Golf fitted with DSG so anything is possible.
