I have a 2021 2l 310 hp Formentor.

Matrix or non matrix headlights how do I tell which I have ?

I think they are non matrix but want to be sure.

I think Matrix headlights were OE on the Formentor VZN & VZ3 but an optional extra on the others!

While in dark where no street lights are and no one in front flick the stick to auto high beam.
You should see dancing lights as soon as you switch to auto high beam.
You can tell it's trying to adjust the beam pattern.
If there is any car Infront it will adjust the beam pattern.
