Yes, change the steering wheel to one with paddles, and code it in with VCDS. You need to check that the steering column controller fitted will support the paddle change.
I did this on a 2011 Skoda Superb 1.8TSI DSG, took less than an hour to do

I have been looking to do this retrofit for my golf 6, how would I go about checking that the steering column controller will support the paddle shifter steering wheel?
Take a vcds scan of the car and cross reference the part number of the steering controller with the compatibility comparison list on the Ross Tech website

I did that on my 2013 Leon FR. Bought second hand steering wheel with paddle shifters and it was just plug and play for me. Nothing needed to be coded on the car, it recognised it straight away and it works perfectly.
It costed me arround 70 pounds off Ebay. Without the airbag, of course
