So I figured my service was coming up soon so I checked the manual to find that it would tell me when to service if I held down the trip reset for 2 seconds whilst turning on the ignition.

So, I do this to be greeted with: "Service Now!"

Why didn't this show on my MFD like it states in the manual before it got to that point?

It's 12 months or 10,000 miles since your last one. The service indicator on the car can be, and often is, wrong.
 
Service indicator i found to come on way before it was due... for my 10,000 service i booked it in as soon as it indicated to do so, when then reset it they put it exactly 10,000 miles ahead so now im coming up on my "30'000" service which is due at 28879 miles... completely logical, not.
