Why the hell would you want to remove it!! Anyway, the first thing you have to do is take off the airbag, so disconnect the battery.
There are two small holes on the back of the steering wheel, where it meets the steering column. Put a small flat head screwdrive in each one, move it about abit, and the airbag will clip out.
The just remove the big bolt in the middle of the wheel, give it a good tug, and it will come off
Poke the screwdriver in and pull the handle outward. It's these clips you're trying to lever across so the airbag lifts away -
Is the Mk4 airbag held on with a splined bolt like the Leon/Toledo ?
I suspect it might be, and you don't find these in every toolbox

IH786 as for your first question, I have a slight disadvantage. Due to cominf off a 350 Yamaha, I no longer have a right hand. This means I need a litte help with steering. I discovered, many years ago, a wonderful steering wheel by Momo called 'The Race'. As they don't do 'The Race' in black I decided to go for a Momo 'Jet 350'. This has the same large additional lumps and bumps that make it easy for me to drive a manual car. Therefore, the standard wheel needs to come off.
I discovered something while purchasing the wheel. I have put, so far, a 'Race'on a lot of the manual cars I've owned. A total of 6 before now. All of them have been bought from the same family, the Ripps. First two were bought from the original Ripspeed in Edmonton, 3 from Extreme and 1 from R-Tec. Even the latest 7th one was from R-Tec.
They've made about a grand from me in steering wheels alone!
