I'm not sure why it would suddenly stop working but there is an option on the infotainment system if you press the "car" one of the settings is for mirrors folding in when parked. If that is ticked then there is a thread in which someone had the same issues, reset their windows themselves and it cured the issue, I can't post URLs as I'm a noobie so I'll copy and paste the relevant info, credit to StevenM....
"I bet one or all of your windows won't auto-drop when you hold the driver's door window switch either? I had the same happen to me which I cured by resetting each of the windows. Ignition on, doors closed, using switches on drivers door, open each window individually holding it down for a couple of extra seconds when it's fully open, then immediately close it and keep the switch held for a couple of extra seconds when it's fully closed" it may take a couple of attempts.

Many thanks for sharing this. I realised today that my mirrors weren't folding and looked on this forum to see if there was a solution. I have a 2015 Cupra and I used your tip but it didn't seem to work after several attempts. A few more searches and I managed to find this worked for me instead:
1. Take drivers window down slightly then back up to top immediately. When it reaches the top, hold for one second the release the switch and immediately pull switch to close again and hold for just one second.
2. Repeat to all windows
After I done this my mirrors folded perfectly.
Your tip helped me find the solution however so hopefully mine will help others who may be struggling.
