Who are you insured with?
Normally the insurers have a deal set up with a hire company.
I'm insured with Direct Line (RBS group - so also Tesco, Churchill, Privledge etc) and they use Enterprise.
I had paid extra for enhanced hire car, so got a Toyota Auris when my Ibiza was written off.
i believe it is just the block and head, but they will not find out the full extent of the damage until they start work, i have no idea if i can keep any parts for spares
At least the insurance is paying out for it. What is included in the engine replacement? is it just the block and head ect, or will it have new accesories such as alternator turbo ect. If so, can you keep the old engine for spares?

Because they are consumable things and your insurance may not cover them if they are replaced. The garage that does it may drain the antifreez and reuse it along with the plugs but the oil will be ditched as it may have metal fragments in it.
Youre insurance does not cover tyres,exzaust, battery or filters and stuff.
