does anyone know if i can fit the speedo head with the white dials into one with black dials as standard. and where is the mileage stored is it the speedo head or the ecu?

The millage is stored in both in dash eeprom and in e.c.m but displayed is only the one from dash insert, to check the one in e.c.m you need a tool.
Also you need adapt the immo when dash is replaced.
I would recomend to disassembly clusters and swap the dials

Yes me, as above swap the dial over the needles prise off with spoons.
If you disconnect the dash from the car loom the air bag light will come on and you'll need vag com to re-set it.
Any more questions just ask.

just wondering how they come out can't see any screws or fixings

Put the steering wheel down as much as you can.
There is a cover that prises up and off in the front of clocks exposing two screws.
