I have checked my oil and it is above the minimum level, but when driving a while over 15 miles or so my oil light flashes and bleeps a couple of times then goes off it then repeats itself, but when i leave the car for 30 mins or so when i drive again it takes a while for the light and beep to kick in again. the car has no lack in performance or making any bad noises.

has anyone got any suggestions in how to solve my problem as in 2 weeks i have to drive a 200 mile trip and then 200 back and dont want to damage my engine.

The service reminder should display on the screen with the mileage when the key is turned but shouldn't make noise when driving and the actual oil light won't flash. It should just say insp or oil on the screen and show the spanner.

Oil light beeping would imply low oil level or pressure problem or something like that surely?

Does the car sound normal when it's idling or just started from cold?

I don't think that it will be the oil filter. To be safe I would take it into a garage and get them to do an oil and filter change; while they're doing it they should be able to take a better look at the car.
 
On a Seat (because its a VW at heart) you're supposed to have ESP oil which is a fair bit dearer. Kwik Fit do oil services with this oil for £54.95 I think.
What's the oil like at the time being? Is it really dark black or is it a golden colour? And do you know the last time it was changed?
 
it was supposed to be changed in june just before i bought it but im not 100%, it a light brownish colour, when the car is driven about in a town for 20 mins the light does not come on only seems to be when i come off the bypass after being on it for a while

Can you post a picture of the oil on the dipstick? When the engine heats up it heats up the oil as well which makes it thinner- thus bringing it below the minimum marker. You need to have the oil filled up so it is just below the maximum; not just above the minimum.
 
I had an issue with noisy tappets when the car was started cold. From googling I found that people with the same issue also had the oil light coming on sonetimes tho mine never got as bad as that.

It turned out mine was a blocked breather pipe which was restricting the engine pressure and stopping the oil getting to the top of the engine when it was cold.

a blockage is something that keeps popping up from any searches that im doing so im hopefull that this is the only problem so i might take it for a oil change and hopefully when they drain it they will be able to get abetter look
 
Mine was basically described to me that the Ibiza Engine is a sealed engine so needs pressure to work, if something like a breather pipe is blocked it is stopping the pressure which in turn will then stop the oil flowing which in my case resulted in one cylinder having no compression and really noisy tappets when the car was cold.

There is a breather pipe in the back of the engine which commonly gets blocked and my sump was taken off and cleaned along with all the other pipes etc in there. I also got the oil and filter changed at the same time.

If your taking it to a garage to have it checked then they would hopefully be able to check all of this for you.

According to my Haynes manual which i just checked for you, the light could be on for:

low oil lever or wrong oil grade
faulty oil pressure switch
worn engine bearings or oil pump
high engine operating temperature
oil pressure relief valve defective
oil pick up strainer clogged
