You have fried the ECU,
Whilst removing the rear Lambda sensor you have either damaged or pulled the wires on the sensor which has caused a short, The Lambda sensor's earth directly into the ECU which shares the same ground points
as the pedal,
The only fix is to have a replacement ECU coded in or get yours fixed.
Got it in one. It happened to me, lambda sensor wires were hanging down, frayed and shorted the ecu. Check out ecu doctor, they repaired mine and I can't recommend them enough, their customer service is second to none. They have a really quick turnaround too so you could be back on the road in a few days.

soon as they started the car there was christmas lights on dash and had to be pushed off the ramp as the go fast pedal didnt work
Then they are liable, They have caused the issue by tampering with the Lambda sensor whilst the battery was still connected.
I would ask to see the old sensor and check the wiring, I reckon they have unscrewed it from the exhaust whilst the sensor was still plugged in and twisted the wiring causing a short.
