After experiencing juddering of the steering wheel when braking from about 60 and above for a few weeks, I took it to a mechanic who said my front discs are warped and need replacing.

My question is how do I know what brakes to use. I have a 2009 1.4 SE on stock 15" alloys.
After doing a quick search on the forum it seems like upgrading the brakes would be a good idea but does better brakes mean bigger too too as it doesn't exactly seem as though there would be a lot of clearance left.

If I do go down the road of upgrading, having read some other threads, EBC OE replacement discs and pads seem to be decent enough while being cheap enough for me being on a bit of a tight budget. If not can anyone who has 15" stock alloys (unlikely seeing as most people have Cupra's and Boca's or FR's:D) recommend any upgraded and relatively cheap discs and pads that would fit with a good bit of clearance left or would it better just getting some OEM ones?

I would keep things simple and relatively cheap and go the OEM route, no need to think about clearance issues or bigger wheels then. At the same time don't buy cheapest parts available but invest a bit more, usually quality/cost ratio is a bit better then.
Upgrading brakes makes sense if you plan to drive on a track occasionally.

As above , just get Pagid discs and pads from ECP, they will give you the right size, probably 256mm if I remember correctly.

With 15" wheels you can go up to 288mm - but, you would need to buy new hubs + calliper carriers + callipers, as well as the discs and pads, so not worth it.

I mostly tend to drive around town with the odd long run, so would it be worth getting Pagid discs over say the Brembo ones which are only £1.50 more each as Brembo seems to be a more well known brand and would they last longer than say OEM ones?

I doubt I'd ever take my Ibiza onto a track with it's gutless engine !(naturally aspirated 1.4) May as well have no point in upgrading I suppose and just get OEM parts but decreasing braking distances would tempt me to buy something a bit better.

I've never ever used Brembo - yet, my main car is an Audi S4, when and if it needs its discs and pads changed I'll probably use Brembo discs and Audi pads.

Pagid is well up to the job and probably as good as OEM - whoever did the discs for VAG. Pagid and Textar and sometimes Bosch supply the pads.

Edit:- Pagid are part of the TMD Friction group of companies, and Pagid and another TMD Friction company, Tetar, supply brake pads to at least VW and Audi factories in the VAG group.

If you decide to stick with oem, try Zimmerman, they're an oem supplier for BMW but without the BMW logo, as good as oem but cheaper.
Zimmerman discs with Pagid pads is a good combo.
