Another apology for digging this up, but my Cupra has just started doing this too, If I slightly lift the pedal with my foot it goes back to normal so I am assuming it's a sticking pedal position sensor or something, I'm going to get in the footwell and take a look at some point soon.
 
Sorry to dig up an old thread. My current pd160 has just started with this issue aswell. Going to 1k revs and down to 800/850 every time I start it in the morning. It’s fine when it warms up however, after a drive to work etc. Tried unplugging the MAF and also checking fault memory, no stored faults. I’m baffled as surely If there was an issue with a vacuum line or boost hose it would be constantly hunting? Any help appreciated lads.
Thats because that is auto choke until warmed up

Old cars used to have a manual choke

It will rev to 1k for a couple minutes or seconds depending on ambient then drop back to normal idle after warmed up a bit.

The reason it doesnt do it from warm as it has no need
